BASIC CHICKEN CURRY

INGREDIENTS

  1. 1 tablespoon oil
  2. 1 onion, chopped
  3. 2 cloves garlic, minced
  4. 1 tablespoon curry powder
  5. 1 teaspoon ground cumin
  6. 1 teaspoon ground coriander
  7. 1 teaspoon turmeric
  8. ½ teaspoon salt
  9. ¼ teaspoon cayenne pepper
  10. 1 can (14.5 ounces) diced tomatoes, undrained
  11. 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  12. ½ cup plain yogurt

PREPARATION

  1. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the curry powder, cumin, coriander, turmeric, salt, and cayenne pepper and stir to combine.
  3. Add the tomatoes and chicken, stirring to coat the chicken with the sauce.
  4. Bring the mixture to a simmer and cook for 10-15 minutes or until the chicken is cooked through.
  5. Stir in the yogurt and serve over rice.
