INGREDIENTS
- 150 gms butter
- 1 tbsp cornstarch
- 100gm chocolate Syrup
- 1 whole lemon juice
- Zest of 1 lemon
- 1 egg yolk
- 1 cup whole wheat flour
- 100gms cold butter, cut into small cubes
- ⅓ cup Chocolate Syrup
- 2 tbsp Cocoa Powder
- chocolate-3 or 4 pieces
PREPARATION
For tart shell:
Preheat the oven at 180°C. Add whole wheat flour and butter in a bowl. Make crumbs of the mixture. Add Chocolate Syrup and Cocoa Powder and knead the dough just enough to get the dough together. Dust your work table with flour & roll out the dough, upto 2 cm thick Line your tart moulds with the dough & prick it with a fork, to avoid puffing up. Then bake at 180 degrees for 15-20 mins.
For chocolate Lemon Curd:
Cream butter till it's smooth. Add cornstarch and mix well to avoid lumps. Add the chocolate Syrup & lemon juice and whisk well. Zest a lemon into the batter and add one egg yolk and whisk well to avoid splitting the batter.
Cook this mixture in a saucepan on a very slow flame for 15 mins and stir to avoid curdling. Cook the mixture upto 70-75 degrees ie just before you reach the boiling stage and remove from the flame. Strain the mixture and keep it cool.
For the final tart, pour the lemon curd into the tart and keep it set in the fridge. Garnish it with sliced strawberries & a mint twig.
