COCONUT CHICKEN CURRY WITH VEGGIES

INGREDIENTS

  1. 1 lb chicken breast, cut into bite-sized pieces
  2. 2 tbsp curry powder
  3. 1 tbsp olive oil
  4. 1 onion, chopped
  5. 2 garlic cloves, minced
  6. 1 red bell pepper, chopped
  7. 1 cup green beans, trimmed
  8. 1 can coconut milk
  9. Salt and pepper to taste

PREPARATION

  1. In a large bowl, mix together the chicken and curry powder until the chicken is well coated.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes.
  3. Add the onion, garlic, bell pepper, and green beans to the skillet. Cook for an additional 5 minutes.
  4. Pour in the coconut milk and stir well. Bring to a simmer and cook for 10-15 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. Season with salt and pepper to taste. Serve with rice or naan bread.
