SAUTEED BABY POTATOES WITH HERBS

Baby potatoes have a delicate, slightly sweet flavor and a creamy texture. Also, since their skin is so thin and new potatoes haven't been hardened, they are more perishable than regular potatoes.

Try out this baby potatoes recipe.

INGREDIENTS

  1. 500 gms baby potatoes peeled

If baby potatoes are not available, peel 4-5 large potatoes and scoop out balls with a melon baller to get baby potatoes. 

  1. 2 tbsp butter/oil
  2. 1 tbsp black pepper crushed
  3. 4 tbsp tomato ketchup 
  4. ¼ - ¾ Cup chopped fresh mixed herbs(basil/parsley/mint/coriander/rosemary), use a combination of any 2-3 fresh herbs that are available.

PREPARATION

Peel the potatoes, prick them with a fork. Boil 5 cups of water with 2 tsp salt. Add potatoes and boil in salted water for 7-8 minutes, or till they get cooked. Check with a knife to see that it goes inside smoothly without any resistance.  Now drain it.

Heat oil in a pan for frying. Fry the potatoes. Drain it on paper. 

Heat 2 tbsp butler/oil in a pan. Add crushed pepper, tomato ketchup, mixed herbs and potatoes. Saute to combine spices well. Check salt and add to taste. Serve hot.
